Marry me chicken has officially flown the coop. The combination of sun-dried tomatoes, garlic, cream, and Parmesan is just too good to be tied to one recipe, so I borrowed those flavors for a cheesy potato casserole instead. (And if you want to try more riffs on the classic, we also have marry me salmon, marry me tortellini, and marry me chickpeas). The key is slicing the potatoes thinly and evenly so they cook at the same rate and soak up all that savory cream sauce.
