The key part of any good copycat recipe is that one hard-to-pinpoint flavor component that makes the whole thing light up the nostalgia part of your brain. Without it, even a delicious meal feels a little bit like a letdown. For the homemade McGriddle, that turned out to be boxed pancake (or biscuit) mix.
