  • 4 large tomatoes
  • salt and pepper
  • 1/2 pound ground sausage
  • 1 cup white rice cooked
  • 1 1/2 cup Colby Jack cheese shredded and divided
  • 1/2 cup parmesan cheese shredded
  • 2 Tablespoons basil chopped
